CONCEPT

Half a step ahead

What we aims for is not "one step ahead," but "half a step ahead." This is about creating bread that goes just a little beyond what's expected, turning the idea of "wouldn't it be great if" into reality. To surpass others, we put in twice the effort. To truly serve others, we put in three times the effort. We thoroughly study baking theory, understand the characteristics of ingredients, and carefully analyze the five tastes (bitterness, sourness, saltiness, sweetness, umami). Above all, we consistently put ourselves in the customer's shoes. “What can we do now to reach half a step ahead?” This question is our philosophy.

半歩先の思考

トロパンが目指すのは、“一歩先”ではなく、“半歩先”。 それは、「あったらいいな」を実現する、少し先を行くパンづくり。
人に勝るには、人の倍努力する。 人の役に立つには、人の3倍努力する。
わたし達は、製パン理論をとことん学び、食材の特徴を理解し、五味(苦味・酸味・塩味・甘味・旨味)を丁寧に分析します。 そして、何よりもお客様の視点に立ち続けます。
「半歩先にたどり着くために、今、自分たちにできることは何か?」 この問いこそが、トロパンの哲学です。

SHINJI TANAKA

田中 真司

Born in Kobe City in 1979.
Studied under Masaki Asano, a bakery & cafe restaurant producer. Trained at “Dunurarte” for six years, serving as sous chef, before becoming independent. In November 2009, opened "TOLO PAN TOKYO" with former representative Ueno in Ikebukuro.

Hello, I’m Shinji Tanaka.I’d be very happy if you love TOLO PAN TOKYO. To love something means to fill almost all of your time with it, and that means we, as a team, are the ones who love the shop the most. I hope each of you will come to love it in your own way.

By making things with care, you naturally want to share them with care. And when something is passed on with care, it seems to create a sense of peace; I feel that care doesn’t lead to conflict. Bread is a carefully made product, created by hand, with a magical ability to calm conflict.

Before TOLO PAN TOKYO opened, we talked about whether we could create a new culture with bread, something that’s a part of everyday life. Just like music or fashion, we aim to create a “culture that brings happiness.”
From the love of Toropan, we want to create something intangible, even without a clear form.
